

Crispy, cheesy, and loaded with spinach goodness – these puff pastry squares are the ultimate party snack or afternoon treat. They come together in no time and vanish just as fast!
🛒 Ingredients:
- 1 sheet puff pastry (thawed)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200g (about 7 oz) fresh spinach (or use frozen, thawed & drained)
- Salt and pepper to taste
- 100g (about 3.5 oz) feta cheese, crumbled
- 50g (about 1.75 oz) mozzarella cheese, shredded
- 1 egg (for egg wash)
👩🍳 Directions:
- Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper.
- In a pan, heat olive oil over medium heat. Add chopped onion and cook until soft.
- Stir in garlic and cook for 1 more minute until fragrant.
- Add spinach and sauté until wilted (if using fresh). Season with salt and pepper. Remove from heat and let cool slightly.
- Mix in crumbled feta and shredded mozzarella into the spinach mixture.
- Roll out the puff pastry sheet and cut into squares (around 8–10 depending on size).
- Spoon a bit of the spinach-cheese filling into the center of each square.
- Fold corners slightly toward the center or leave open for a rustic look.
- Brush the edges lightly with beaten egg.
- Bake for 15–20 minutes, or until golden and puffed.
