- 4 cups dried macaroni (elbow pasta)
- 1 whole egg

- 1 lb sharp cheddar cheese, shredded

- Cook the macaroni until just firm (al dente). Drain and set aside.
- In a large pot, melt the butter over medium-low heat.
- Sprinkle in the flour and whisk constantly for about 2 minutes to make a roux.

- Whisk in dry mustard, salt, seasoned salt, and pepper.
- Crack the egg into a separate bowl. Slowly add a few spoonfuls of the hot milk mixture to the egg, whisking constantly to temper it. Then pour the egg mixture into the pot, stirring quickly.
- Add ¾ of the shredded cheese to the sauce, stirring until melted and smooth.
