
Ingredients:
For the Beef & Gravy:
- 2 lbs beef stew meat (or chuck roast, cut into chunks)
- 2 tbsp olive oil
- 1 packet onion soup mix
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups beef broth
- 1 packet brown gravy mix
- Salt & black pepper, to taste
For the Mashed Potatoes:
- 3 lbs potatoes, peeled & cubed
- 4 tbsp butter
- ½ cup milk (more if needed)
- Salt & pepper, to taste
Instructions:
- Brown the beef: In a skillet, heat olive oil over medium-high heat. Sear beef chunks until browned on all sides (they don't need to be cooked through).
- Make the gravy: In a slow cooker or large baking dish, combine onion soup mix, mushroom soup, beef broth, and gravy mix. Stir well. Add browned beef, cover, and cook on LOW for 6-7 hours (or bake at 300°F for about 3 hours) until beef is tender.
- Cook potatoes: While beef cooks, boil potatoes in salted water until fork-tender (about 20 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- Serve: Spoon tender beef and savory gravy over fluffy mashed potatoes.
