

Ingredients:
For the Beef & Gravy:
- 2 lbs beef stew meat (or chuck roast, cut into chunks)
- 2 tbsp olive oil
- 1 packet onion soup mix
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups beef broth
- 1 packet brown gravy mix
- Salt & black pepper, to taste
For the Mashed Potatoes:
- 3 lbs potatoes, peeled & cubed
- 4 tbsp butter
- ½ cup milk (more if needed)
- Salt & pepper, to taste
Instructions:
- Brown the beef: In a skillet, heat olive oil over medium-high heat. Sear beef chunks until browned on all sides (they don’t need to be cooked through).
- Make the gravy: In a slow cooker or large baking dish, combine onion soup mix, mushroom soup, beef broth, and gravy mix. Stir well. Add browned beef, cover, and cook on LOW for 6–7 hours (or bake at 300°F for about 3 hours) until beef is tender.
- Cook potatoes: While beef cooks, boil potatoes in salted water until fork-tender (about 20 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- Serve: Spoon tender beef and savory gravy over fluffy mashed potatoes.
