4 cups dried macaroni (elbow pasta)
1 whole egg
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk

1 lb sharp cheddar cheese, shredded
1/2 tsp salt (or to taste)
1/2 tsp seasoned salt (like Lawry’s)
1/2 tsp black pepper

Cook the macaroni until just firm (al dente). Drain and set aside.
In a large pot, melt the butter over medium-low heat.
Sprinkle in the flour and whisk constantly for about 2 minutes to make a roux.
Pour in the milk slowly while whisking until smooth and thickened.
Whisk in dry mustard, salt, seasoned salt, and pepper.
Crack the egg into a separate bowl. Slowly add a few spoonfuls of the hot milk mixture to the egg, whisking constantly to temper it. Then pour the egg mixture into the pot, stirring quickly.
Add ¾ of the shredded cheese to the sauce, stirring until melted and smooth.
Add the cooked macaroni to the cheese sauce and stir well to coat.
Pour into a buttered baking dish and top with remaining cheese.
