🛒 Ingredients:
For the Meatloaf:
- 2 lbs ground beef
- 1 small onion, finely diced
- 1/2 cup green bell pepper, finely diced (optional but classic!)
- 2 large eggs
- 1 cup crushed Ritz crackers (or saltines)
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
For the Glaze:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tsp yellow mustard

- Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan or line a baking sheet with parchment.
- In a large bowl, mix together all meatloaf ingredients until well combined – don’t overmix!
- Shape the meat mixture into a loaf and place into the pan or on the sheet.
- In a small bowl, mix glaze ingredients until smooth.
- Spread half the glaze over the meatloaf.
- Bake for 30 minutes, then spread the remaining glaze on top.
- Continue baking for another 20–30 minutes, or until internal temp reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
