
Ingredients:
- 1½ lbs ground beef
- 1 small onion, chopped
- 1 can (16 oz) refried beans
- 1 can (10 oz) enchilada sauce
- 1 can (10.75 oz) cream of mushroom soup
- ½ cup milk
- 6 large flour tortillas
- 2 cups shredded cheddar cheese (or Mexican blend)
- Optional toppings: sour cream, chopped green onions, shredded lettuce, diced tomatoes
Instructions:
- Cook the beef: In a large skillet over medium heat, cook the ground beef and onion until meat is browned and onion is soft. Drain excess grease.
- Add beans: Stir in the refried beans and heat through. Remove from heat.
- Make the sauce: In a saucepan, combine enchilada sauce, cream of mushroom soup, and milk. Heat and stir until smooth and hot, but not boiling.
- Assemble the burritos: Spoon the beef and bean mixture evenly down the center of each tortilla. Roll up tightly and place seam-side down in a greased 9×13-inch baking dish.
- Smother in sauce: Pour the warm sauce over the burritos, covering them completely.
- Top with cheese: Sprinkle shredded cheese generously over the top.
- Bake: Preheat oven to 350°F (175°C) and bake uncovered for 20–30 minutes, or until cheese is melted and bubbly.
- Serve hot: Add your favorite toppings and dig in!
