📝 Ingredients:
For the casserole:
- 3 boneless, skinless chicken breasts
- 1 (12 oz) bag of frozen stir-fry vegetables (or your favorite mix!)
- 3 cups cooked brown or white rice
For the homemade teriyaki sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 1 tablespoon cornstarch
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon minced garlic
- 1 tablespoon honey
👩🍳 Directions:
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Make the teriyaki sauce: In a small saucepan, whisk together soy sauce, water, brown sugar, ginger, garlic, honey, and cornstarch. Cook over medium heat, stirring constantly until the sauce thickens (about 5 minutes). Remove from heat.
- Cook the chicken: Place raw chicken breasts in the prepared baking dish. Pour 1/3 of the teriyaki sauce over the chicken. Cover with foil and bake for 30 minutes.
- Shred the chicken: Remove dish from oven, shred the chicken in the pan using two forks.
- Add veggies & rice: Add cooked rice and frozen vegetables to the casserole dish. Pour remaining sauce over everything and mix well.
- Bake again: Return to oven and bake uncovered for 15–20 more minutes until everything is heated through and the veggies are tender.
- Serve hot and enjoy every bite!
