
Ingredients:
- 1 lb lean ground beef (or ground turkey for even fewer calories)
- 1 egg
- 1 onion, chopped
- 1 cup skim milk
- 1 cup dried bread crumbs
- Salt and pepper to taste
- 2 tbsp brown sugar
- 2 tbsp prepared mustard
- ⅓ cup ketchup
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a loaf pan or baking dish.
- Mix the loaf: In a large bowl, combine ground beef, egg, onion, milk, and bread crumbs. Season with salt and pepper. Mix until just combined — don’t overwork it!
- Shape & set: Press the mixture into your prepared pan and smooth out the top.
- Make the topping: In a small bowl, mix together brown sugar, mustard, and ketchup. Spread this evenly over the top of the meatloaf.
- Bake: Bake for 1 hour, or until fully cooked through and the topping is bubbly and caramelized.
