Instructions:
- Make the peach cobbler filling:
In a saucepan over medium heat, add sliced peaches (with syrup), brown sugar, cinnamon, and butter. Stir until bubbling.
If you want a thicker sauce, dissolve cornstarch in a tablespoon of water and stir it in.
Cook for 2–3 more minutes until thickened, then stir in vanilla extract. Let it cool. - Make the cheesecake filling:
Beat softened cream cheese until smooth. Add powdered sugar and vanilla, mix well.
Fold in the whipped topping until light and fluffy. - Assemble the cones:
Start with a scoop of cheesecake filling in the bottom of each cone.
Add a spoonful of peach cobbler, then sprinkle crushed graham crackers or cookies for texture.
Repeat layers until the cone is full. - Finish strong:
Top with extra peach filling, a swirl of cheesecake mix, and drizzle with caramel or dust with cinnamon sugar if desired. - Serve immediately or chill for 10–15 minutes to set slightly — but good luck waiting!
