

Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 can (21 oz) lemon pie filling
Directions:
- Preheat oven to 350°F (175°C).
- Place the butter in a 9×9 or 9×13 baking dish and put it in the oven to melt while it preheats.
- In a bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.
- Carefully remove the hot dish from the oven and pour the batter evenly over the melted butter—do not stir!
- Spoon the lemon pie filling gently over the top of the batter—again, do not mix.
- Bake for 45–50 minutes, or until the top is golden and the edges are bubbling.
- Let cool slightly before serving.
