📝 Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
- 1 medium onion, chopped
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded Monterey Jack cheese, divided
- 1 can (4 oz) sliced jalapeños (optional, for heat)
- 2 cups Bisquick baking mix
- 2/3 cup water (for biscuit layer)
👩🍳 Directions:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, cook ground beef and onion until fully browned. Drain grease.
- Stir in taco seasoning and 1/2 cup water. Let simmer for 5 minutes.
- In a separate bowl, mix Bisquick with 2/3 cup water to form a soft dough. Press into the bottom of the baking dish to create a crust.
- Spread the cooked beef mixture over the crust.
- In another bowl, mix sour cream, mayonnaise, half the cheddar, half the Monterey Jack, and drained tomatoes. Stir in jalapeños if using.
- Spread this creamy mixture over the beef layer.
- Sprinkle remaining cheese over the top.
- Bake uncovered for 30–35 minutes, or until bubbly and golden.
💡 Tips & Serving Ideas:
- Serve with a side of guac, salsa, or a crisp green salad 🥑🥗
- Not a fan of spice? Skip the jalapeños or use mild Rotel
- Great for potlucks and game nights — reheats like a dream!
