📝 Ingredients:
For the shortbread base:
- 1 cup all-purpose flour
- 1/2 cup (1 stick) unsalted butter, softened
- 1/4 cup granulated sugar
For the filling:
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons lemon juice
For the topping:
- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons butter
👩🍳 Directions:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- Make the crust: In a bowl, mix flour, butter, and sugar until crumbly. Press evenly into the bottom of the pan.
- Bake for 15–20 minutes, or until the edges are just golden. Let cool slightly.
- Mix the filling: In a small bowl, combine sweetened condensed milk and lemon juice. Pour over the cooled crust and spread evenly.
- Bake again for 10–12 minutes, just until the filling is set. Cool completely.
- Make the chocolate topping: Melt chocolate chips with butter (microwave in 30-second intervals, stirring in between, or use a double boiler).
- Pour chocolate over the cooled filling and spread into an even layer.
- Chill in the fridge for at least 1 hour before slicing into squares.
💡 Tips & Serving Ideas:
- Use a hot knife to slice for clean edges 🔪
- Swap lemon juice for vanilla extract if you prefer no citrus tang
- Store in the fridge in an airtight container for up to 5 days
