- 6 medium potatoes, peeled and shredded
- ½ cup onion, finely chopped
- 2 large eggs
- 2 tbsp all-purpose flour
- ¼ tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- Oil, for frying
Instructions:
- Prep the potatoes: Shred potatoes using a grater or food processor. Place in a clean kitchen towel and squeeze out as much liquid as possible.
- Mix the batter: In a large bowl, combine shredded potatoes, onion, eggs, flour, baking powder, salt, and pepper. Mix well until everything is coated.
- Heat oil: In a large skillet, heat about ¼ inch of oil over medium-high heat.
- Fry the pancakes: Drop spoonfuls of the mixture into the hot oil, flattening slightly with a spatula. Fry for 2–3 minutes per side, until golden brown and crispy.
- Drain & serve: Remove and place on paper towels to drain excess oil. Serve hot!
