Ingredients:
- 2 eggs
- 2 tbsp all-purpose flour
- ¼ tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- 6 medium potatoes, peeled and shredded
- ½ cup finely chopped onion
- Oil for frying (vegetable or canola)
Instructions:
- Mix the base: In a large bowl, beat the eggs, then stir in flour, baking powder, salt, and pepper.
- Prep the potatoes: Shred the potatoes using a grater or food processor. Place in a clean kitchen towel and squeeze out as much liquid as possible.
- Combine: Add the shredded potatoes and chopped onion to the egg mixture. Mix well to coat everything evenly.
- Fry it up: Heat oil in a large skillet over medium-high heat. Drop spoonfuls of the mixture into the hot oil and flatten slightly with a spatula.
- Cook until golden: Fry 2–3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
- Serve hot: Best enjoyed warm and fresh from the skillet!
🍽️ Serving Suggestions:
- Sweet: Top with applesauce or powdered sugar.
- Savory: Serve with sour cream, chives, or smoked salmon.
💡 Tips:
- For extra crispiness, don’t overcrowd the pan.
- Keep cooked pancakes warm in a low oven (200°F) while you finish the batch.
