

Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2–3 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes, undrained
- 1½ cups cooked rice (white or brown)
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 1½ cups shredded mozzarella or cheddar cheese
Instructions:
- Cook the beef: In a large skillet, cook ground beef and onion until meat is browned. Drain any excess grease.
- Add peppers & garlic: Stir in chopped peppers and garlic. Cook for 3–4 minutes until softened.
- Make it saucy: Add tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Stir and let simmer for 5 minutes.
- Mix with rice: Stir in the cooked rice until well combined.
- Assemble the casserole: Pour mixture into a greased 9×13-inch baking dish. Sprinkle cheese on top.
- Bake: Bake at 350°F (175°C) for 20 minutes, until cheese is melted and bubbly.
- Serve hot & enjoy!
