📝 Ingredients:
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 tablespoons vegetable or sesame oil
- 3–4 cups mixed stir-fry vegetables (like bell peppers, broccoli, carrots, snap peas)
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 teaspoon ground ginger (optional)
- Salt & pepper to taste
- Cooked white rice, for serving
- Optional: sesame seeds & chopped green onions for garnish
👩🍳 Directions:
- In a small bowl, whisk together soy sauce, honey, water, cornstarch, and ground ginger (if using). Set aside.
- Heat oil in a large skillet or wok over medium-high heat.
- Add sliced chicken, season with salt and pepper, and cook until browned and cooked through (about 5–7 minutes). Remove from pan and set aside.
- In the same pan, add a bit more oil if needed and stir-fry your veggies until just tender but still crisp (about 4–5 minutes).
- Add garlic and cook for 1 more minute, stirring constantly to avoid burning.
- Return chicken to the pan, pour in the sauce, and stir everything together.
- Cook for another 2–3 minutes until the sauce thickens and everything is well coated.
- Serve hot over rice and garnish with sesame seeds or green onions if desired.
💡 Tips & Serving Ideas:
- Use pre-cut frozen stir-fry veggies to save time 🕒
- Add crushed red pepper flakes or sriracha for a spicy kick 🌶️
- Great with noodles too — just toss them in at the end!
