

Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt & pepper to taste
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Small corn or flour tortillas
- Oil for frying (vegetable or olive oil)
- Optional toppings: sour cream, salsa, avocado, hot sauce, cilantro 🌿
Directions:
- In a bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some texture.
- Stir in chopped onion, garlic powder, cumin, salt, and pepper.
- Heat a little oil in a skillet over medium heat.
- Spread a spoonful of the bean mixture and a sprinkle of cheese on half of each tortilla, then fold it closed.
- Place tacos in the skillet and cook 2–3 minutes per side, pressing slightly, until golden brown and crispy.
- Drain on paper towels and serve hot with your favorite toppings!
