- 4 boneless, skinless chicken breasts
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 tbsp olive oil
- Salt & pepper to taste
- 1 tsp paprika
- 1 tsp Italian seasoning
For the garlic mushroom filling:
- 1 tbsp butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- Salt & pepper to taste
- 1 tsp fresh chopped parsley (optional)

- Preheat oven to 375°F (190°C).
- In a skillet, melt butter and sauté sliced mushrooms over medium heat for 5–6 minutes until browned. Add minced garlic, cook for another 1–2 minutes. Season with salt, pepper, and parsley. Set aside to cool.
- Use a sharp knife to cut a pocket into each chicken breast, being careful not to slice all the way through.
- Season chicken with salt, pepper, paprika, and Italian seasoning on both sides.
- Stuff each chicken breast with sautéed mushrooms, shredded mozzarella, and parmesan. Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden brown.
- Transfer chicken to a baking dish and bake for 15–20 minutes, or until cooked through (internal temp should reach 165°F).
- Let rest a few minutes before serving. Drizzle any pan juices over the top!
