🧂 Ingredients You’ll Need
You only need a handful of simple, everyday ingredients:
- 1 lb (450g) boneless chicken breasts or thighs
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), sliced
- 1 cup mushrooms, sliced
- 1 tsp paprika
- ½ tsp chili flakes (optional for heat)
- Salt and pepper, to taste
- ½ cup chicken broth
- ¼ cup heavy cream or coconut milk
- 1 tbsp Dijon mustard
- Fresh parsley, chopped, for garnish
- (Optional) cooked rice, pasta, or crusty bread for serving
👩🍳 Step-by-Step Instructions
Step 1: Prepare the Chicken
Season the chicken well with salt, pepper, and paprika. This adds flavor from the start.
Step 2: Brown the Chicken
Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides (about 5–6 minutes per side). Remove and set aside.
Step 3: Sauté the Veggies
In the same pan, add onions, garlic, bell pepper, and mushrooms. Sauté for 4–5 minutes, until softened and fragrant.
Step 4: Make the Sauce
Pour in the chicken broth, heavy cream, and Dijon mustard. Stir and let the mixture simmer for 2–3 minutes. The sauce should thicken slightly.
Step 5: Combine & Serve
Return the chicken to the pan and spoon the sauce over it. Simmer for another 5 minutes until the chicken is fully cooked and coated in sauce.
Garnish with fresh parsley and serve over rice, pasta, or with crusty bread.
