Ingredients
Ingredient | Quantity |
---|---|
Pecan halves | 64 pieces |
Soft caramels (unwrapped) | 11 oz |
Semi-sweet chocolate chips | 1 bag (about 12 oz) |
Water | 1 tablespoon |
Parchment paper or silicone mat | As needed |
Instructions
Step 1: Create Pecan Bases
Line a baking sheet with parchment paper or a silicone baking mat.
Arrange four pecan halves in small clusters, shaped like a turtle with a head and legs.
Step 2: Melt the Caramels
Place the unwrapped caramels in a microwave-safe bowl.
Add 1 tablespoon of water.
Microwave in 30-second intervals, stirring between each round until the caramel is smooth and pourable.
Let it cool slightly while remaining liquid.
Step 3: Add Caramel
Spoon a dollop of melted caramel onto the center of each pecan cluster, just enough to hold the nuts together.
Allow to set for about 10 minutes until firm.
Step 4: Melt the Chocolate
Place chocolate chips in another microwave-safe bowl.
Heat in 30-second bursts, stirring until completely melted and smooth.
Step 5: Top with Chocolate
Spoon melted chocolate over the caramel-covered clusters.
Use the back of the spoon or a toothpick to swirl the chocolate if desired for a decorative touch.
Step 6: Cool & Enjoy
Let the candies cool at room temperature, or pop them in the fridge for faster setting.
Once firm, gently peel them off the paper or mat.
Store in an airtight container, or enjoy them right away!
