- 2 tbsp fresh basil, chopped (or parsley)
- Salt & black pepper, to taste
Instructions:
- Prep the tomatoes: Place chopped tomatoes in a large bowl.
- Make the dressing: In a small bowl, whisk together olive oil, vinegar, garlic, sugar, salt, and pepper.
- Toss together: Pour dressing over tomatoes and gently toss to coat.
- Add herbs: Stir in fresh basil or parsley just before serving.
- Chill (optional): Refrigerate for 15–20 minutes for the flavors to meld — or serve immediately!
